Title: Potato Soup

12 Yukon gold potatoes;
- skinned & cubed
4 Celery ribs; chopped
2 Leek leaves; chopped
1 c Chicken stock (approximate)
3 Green onions; chopped
1 c Half-and-half and/or milk
- (approximate)
1 pn Nutmeg; or to taste
Salt & pepper; to taste
Boil the potatoes and celery in a pot of water until the potatoes can
be easily pierced with a fork.
Depending on the desired consistency of the soup, drain as much, or
little, water from the pot as is necessary. Next, take an immersion
blender, and puree the potatoes and celery.
Add the chicken stock, half-and-half and/or milk (the quantities of
which will depend on the desired consistency of the soup), a pinch of
nutmeg, salt, and pepper; stir the contents.
Add the leeks and green onions, and stir.
